Aroma
Longjing tea is known for its fresh and delicate aroma, which can include hints of chestnut and a light floral fragrance.
Flavor
The taste of Longjing tea is gentle, with a sweet and slightly nutty flavor. It offers a smooth, mellow mouthfeel and a lingering aftertaste that is both refreshing and satisfying.
Production Process
The production of Longjing tea is a meticulous process that involves several key steps:
- Plucking: Only the tender, young buds and leaves are harvested in early spring.
- Withering: The leaves are spread out to air-dry and lose some of their moisture.
- Pan-frying: The leaves are pan-fried by hand in large woks. This process, known as "shaqing" (杀青), deactivates the enzymes to prevent oxidation and helps shape the leaves.
- Shaping: During pan-frying, the leaves are pressed against the sides of the wok to achieve their characteristic flat shape.
- Drying: The leaves are further dried to remove any remaining moisture, ensuring their longevity and preserving their flavor.
Nutritional Value
Longjing tea is rich in antioxidants, particularly catechins and polyphenols, which contribute to its health benefits. These include boosting metabolism, improving heart health, and providing anti-inflammatory effects. The tea also contains vitamins, amino acids, and minerals.
Brewing Tips
To brew the perfect cup of Longjing tea, use water at around 75-80°C (167-176°F). Steep about 1-2 teaspoons of tea per cup for 1-2 minutes. The tea can be steeped multiple times, with each infusion bringing out different layers of its delicate flavor.
